Hanging out at a bar and going down the menu trying different drink recipes is always fun, but when I tried this Mai Tai recipe, the game changed.
I always thought tropical drinks were just fruit juice with a ton of booze. But the Mai Tai has a complex flavor profile that sent it straight to the top of my favorite cocktails list. I love mixing this recipe up for friends when we’re enjoying a lazy day at Pausa, our pool bar.

Mai Tai Recipe
Ingredients – Single serving
- 3.5 oz freshly squeezed Lime juice
Yes, squeeze the limes. The freshness in flavor adds a lot to the final mix. - 1 oz Orgeat syrup
There are recipes to make your own but the best we have found off the shelf is by Liber & Co. I don’t know how this company does it, but the quality and flavor of their syrups are amazing.
- 1/2 oz of Pierre Ferrand dry curaçao
- 1 1/2oz Aged Rum
You can experiment with different rums but for this drink lean into the Jamaican rums. They bring a tremendous amount of flavor that simply can’t be beat. They are also great served neat;) - 1/2 ounce Dark Rum
Jamaican rum again. Once you taste the rich flavor you’ll understand why this is the way to go.
Garnish with fresh mint and a lime wedge
Mix
Place the lime juice, Orgeat syrup, orange liqueur and aged rum into a cocktail shaker. Add ice and shake till cold.
Strain the drink into an ice filled double old fashioned glass.
Float the dark rum and garnish with mint and lime wedge.
